Tasting notes: Mirabelle Plum, Bergamot, Orange Zest
Tamiru Tadesse produced this 74158 lot in the Bensa highlands near the village of Alo. Carefully selected cherries ferment anaerobically for 48 hours, then are pulped and slowly dried on African beds with part of the mucilage retained, building sweetness while preserving the coffee’s local identity.
The coffee belongs to the DIGS Project, which supports advanced traceability, innovative processing and fairer compensation for producers. Tanat scores the lot at 88 and roasts it for filter, describing a vibrant profile of mirabelle plum, bergamot and orange zest with enveloping sweetness, lively acidity and a delicate body.
