About the Wine
Elvio Cogno's Cascina Nuova is a Barolo DOCG made entirely from Nebbiolo grown in the estate's Piedmont vineyards. The winery uses younger vines to create an approachable expression of Barolo, with a 30-day submerged-cap maceration followed by 24 months in large Slavonian oak casks and further bottle aging.
Tasting Notes
The wine combines a vivid garnet color with flowers, fresh fruit, and light, delicate spice, while red fruit, roses, and truffle add to its aromatic range. The palate is round and balanced, carrying Barolo's elegance and structure into a harmonious, mineral-leaning finish with lasting presence.
Pairing
Cascina Nuova is well suited to richly flavored foods that can meet its structure without overwhelming its detail. The producer recommends braised or roasted meats, game, and mature cheeses, and its balanced profile also makes it a versatile red to serve throughout a meal.
